The first cellar is dedicated to the vinification and drying of grapes for Vinsanto and is located next to the vineyards in the Pietrose area. The second cellar, situated above the vineyards and also in Pietrose, is in a more accessible location, near important communication routes for logistics. This cellar is dedicated to aging in small barrels, storage of bottles, and also houses the offices. Finally, the third cellar is dedicated to aging in large casks and is located in the historic center between two of the oldest buildings in the city: Palazzo Tarugi and Palazzo Sinatti.
